Words cannot express what Houston and the Texas surrounding areas have gone through in the past 7 days. Only a week ago I was leaving work to fight the crowds at the grocery store that was already out of most water, bread, and canned food. We all buzzed about where our homes were located, how they might be affected by the storm, and generally complained about how awful it would be to lose power and AC in the Houston summer. Houston Foodie Guide for Superbowl LI

As you may or may not know (I most definitely know, because it’s all everyone here in Houston is talking about), the Superbowl is coming up on February 5th! You may also have forgotten that I am a member of the Houston Food Blogger Collective. The crew took it on as their civic duty to make a list of amazing restaurants to try out in Houston during the big game weekend, plus a list of tantalizing recipes to serve at your watch parties. So there is no Fri-DIY today, but I have some very exciting news. I’ve been accepted into the Houston Food Blogger Collective! I’m joining tons of other amazing food bloggers, photographers, bakers, and lovers in their search and adoration of good food. I will be attending events at various Houston establishments and look forward to sharing photos and recipes with y’all so you can enjoy all that Houston and it’s food have to offer.

Along with the introduction to satisfactory sips and snacks, I’m looking forward to an introduction to some really amazing Houston food bloggers. Since I usually share something with you all on Friday’s, I wanted to share some posts from some of my new favorite Houston bloggers! Check them out and watch out for drool….

Erika from Pancake Princess is quite literally the queen of the cake. Her pictures are to die for, and the food is fit for royalty. Just look at this stack. Did I mention there’s buckwheat in there? I don’t know how she makes such healthy things so delicious, but she does.

I was obviously drawn in by the blog name at Let them Eat Queso (you know me and puns), but I love the mix of travel, recipes, and food adventures that Hannah shares. Her last recipe post was for fried green tomatoes, a perfect accompaniment to eggs at brunch that I see down here a lot!

Baby Barnaby’s Green Eggs and Ham Recipe

So there’s this magical little brunch place that my friends and I love to go to. There’s very little space and always a line, but if you have a bit of patience a brunch in the sun is lovely at Baby Barnaby’s. The menu has various delicious options with breakfast burritos, pancakes, and the like. But I come here for the Green Eggs and Ham. The eggs are quite literally green and the ham is actually apple sausage (amazing). I crave the green eggs so often that I decided to make my own homemade recipe to save a few bucks and a wait in line! The true version includes artichoke hearts too but I don’t usually have those on hand so I ditched ’em. Just grab a small can and sauté with the spinach to include them if you fancy!

Ingredients:

(Makes 4 servings)

8 Eggs
1/2 cup Milk
2 handfuls of Spinach
2 cloves of Garlic minced
1 Tbs Olive Oil
1 cup shredded Monterey Jack Cheese
Salt and Pepper

1. Put the oil and garlic in a large frying pan and sauté until the garlic has browned.

2. Add the spinach (and artichokes if you’d like) to the pan and cook until the spinach has all wilted.

3. Whisk up your eggs, milk, and a dash of salt and pepper in a large bowl to add fluffiness to the eggs. Pour egg mixture over the spinach and cook on medium low. Scramble the eggs while they cook to mix up all of the eggs and veggies.

4. When the eggs have almost fully cooked, add the cheese and mix around until it has fully melted.

Serve hot with some bacon and toast, or get really fancy and find some apple sausage at the grocery store to cook! You could open your own little B+B at this point.

The Mongoose v. Cobra PB + B Recipe

One of my favorite bars in Houston is  Mongoose vs. Cobra. The small warehouse-esque building shows off it’s original exposed brick walls, complemented by warm wooden tables for resting a hand crafted cocktail on. They have amazing drinks, my favorite being Gold Rush #2 (not sure what happened to #1), and quite the spread of food being served until 1 AM! The food, oh the food… They are famous for their giant (face sized) pretzel which comes with house mustard and pickled everything. But what my friends and I have newly discovered is the PB + B.
