I feel like I have total vacation brain right now. Anything tropical is just calling out to me, between the pineapple jalapeno margs and the palm printed pillows, it’s just time for me to head to Hawaii… anyone think my boss would let me go a week early?
If you aren’t on vacation yet, or are in need of a serious staycation, you’re going to need to try these Sparkling Pina Coladas. The traditional pina colada is a thick, smooth blend of coconut milk, pineapple, and rum. It’s a quintessential summer vacation drink because the flavors are tropical and unbearably fun. Though I love them, they can be so sugary and really heavy, so I decided it needed a little lightening up.
The Sparkling Pina Colada, like a classic pina colada, includes the great pineapple and coconut flavors, but the coconut comes in the form of this 5 calorie coconut ginger ale I got in my Degustabox this month! (Try Degustabox, a box of fun and new grocery items, for only $10 with my code: Shop now). You would not believe how much coconut flavor they can pack into that little can. I used one can to make about 6 drinks! The fizziness of the ginger ale adds a really refreshing note to the drink, but you still have the sugary goodness of a classic pina colada. The perfect vacation beverage!
Did I mention this is only three ingredients and you don’t need a blender to make them? You’ll be vacation ready in a minute, even if you aren’t knee deep in the water somewhere.
Thank you to Degustabox for sponsoring the blog post. All recipes and opinions about the products and Degustabox are my own.

Nice twist to put the ginger ale in it! Thanks for sharing! We have just got back from a week in Croatia where sunset Pina Coladas quickly became part of our daily ritual. I wrote a poem about the bar where we would sit and drink them which features on my poetry blog today in case you have time to look? Sunny greetings, Sam 🙂
