Sparkling Pina Colada Cocktail

I feel like I have total vacation brain right now. Anything tropical is just calling out to me, between the pineapple jalapeno margs and the palm printed pillows, it’s just time for me to head to Hawaii… anyone think my boss would let me go a week early?

If you aren’t on vacation yet, or are in need of a serious staycation, you’re going to need to try these Sparkling Pina Coladas. The traditional pina colada is a thick, smooth blend of coconut milk, pineapple, and rum. It’s a quintessential summer vacation drink because the flavors are tropical and unbearably fun. Though I love them, they can be so sugary and really heavy, so I decided it needed a little lightening up.

The Sparkling Pina Colada, like a classic pina colada, includes the great pineapple and coconut flavors, but the coconut comes in the form of this 5 calorie coconut ginger ale I got in my Degustabox this month! Sparkling Pina Colada

Ingredients

1 oz. Rum
2 oz. Pineapple Juice
1 oz. Coconut Ginger Ale
Ice
Pineapple for garnish

Fill a glass with ice. Pour in the rum, pineapple juice, and coconut ginger beer and stir to combine. Garnish with a slice of pineapple.

  1. Nice twist to put the ginger ale in it! Thanks for sharing! We have just got back from a week in Croatia where sunset Pina Coladas quickly became part of our daily ritual. I wrote a poem about the bar where we would sit and drink them which features on my poetry blog today in case you have time to look? Sunny greetings, Sam 🙂
