The weekend before last I joined my friends, along with the rest of America, to watch the Super Bowl. I made my version of Chuy’s classic jalapeño ranch dip and swapped out the sour cream for Greek yogurt. After about two hours of devouring it without caring, I realized there was nothing unhealthy about it anymore! Except for the pound of tortilla chips that accompanied it… Small victories.

Most of the time I don’t have a team to really root for in the Super Bowl. Coming from Chicago, I’ve always been a die hard Bears fan, but they haven’t been the best in my lifetime unfortunately. Then I moved to Houston and rooted for the Texans, but needless to say we more root for J.J. Watt and then sadly say goodbye to the team until next year after the playoffs start. But third time’s the charm right? Kyle loves the Broncos, so I’ve obviously joined that bandwagon, and it turns out they’re pretty good!

I wanted to make something in support for our Super Bowl watch party. And no matter what team you root for, you can always root for cake. I decided on a whoopie pie since I could easily dye the filling Broncos orange and blue. Plus, whoopie pies are immensely easier to transport when compared to cupcakes since the frosting is all trapped inside and impossible to mess up. I really don’t know have they have not taken off as a baking trend.

This cake recipe is a winner. I’ve tried many chocolate cake recipes hoping to find one I could use as my go to and haven’t been too impressed until now. The cake is sturdy enough using only one egg to stand on its own as a whoopie pie base, but wasn’t crumbly or overly springy, which in my opinion gives it a fake oily taste.

I filled the pies with good ole buttercream frosting, because that’s how I do. Splitting batches into orange and blue, I filled them alternating between the two colors. I wanted to swirl them, but worried the blue and orange would result in a sad brown color in the end. If the Texans ever make it I might be braver to try red and blue together.

Whoever you rooted for, I hope you had a fun time watching the silliness that was the halftime show, and what I thought was a pretty exciting game! Next time your team is up for a championship, try out these whoopie pies so that everyone is forced to root for them in exchange for some dessert.

Chocolate Whoopie Pies

  • Servings: 16-24 pies, depending on size
  • Difficulty: easy

Ingredients:

Cake:
2 cups Flour
1/2 cup Cocoa Powder
1 1/4 tsp. Baking Soda
1 tsp. Salt
1 cup Buttermilk
1 tsp. Vanilla
1/2 cup Butter
1 cup Brown Sugar
1 Egg

Filling:
1/2 cup Butter
3-4 Tbs. Milk
3-4 cups Powdered Sugar
1 tsp. Vanilla
Food Coloring

1. Preheat the oven to 350 deg. F. Beat the butter and brown sugar until fluffy. Add the egg and mix until just combined.

2. At low speed, alternate adding buttermilk and the flour and cocoa, starting and ending with the buttermilk. Add the baking soda, salt, and vanilla and mix until combined.

3. Scoop small batter mounds on to a greased cookie sheet with at least an inch of space in between pies as they will expand. If you use a heaping teaspoon of batter, you will get mini whoopie pies and will make about 24 pies. If you use a heaping tablespoon of batter, you will get normal sized whoopie pies and will make about 16 pies. I made 8 large and 12 small for my batch.

4. Bake the pies for about 10-12 minutes. Once the cakes come out of the oven, place them on a cooling rack to cool completely.

5. Mix up the frosting by creaming the butter. Then alternate between adding powdered sugar and milk until the frosting is stiff, but smooth enough to push through a piping bag. Add the vanilla and food coloring and mix completely to incorporate.

6. Assemble the pies by finding two halves that match in size. Pipe frosting starting in the middle of one cake half and working your way in a spiral to the outside edges. Sandwich another cake on top. Repeat for the rest.
