Pineapple Jalapeno Margaritas

I like to think that Cinco de Mayo (which I recognize is just an American excuse to make margaritas and chow down on tacos) is the start of margarita season. I never think to make a margarita except for in the heat of the Summer, and then the craving is REAL. I want it sweet, salty, spicy, and cold.

As per usual for me, I didn’t want to settle for just any old plain margarita recipe. Why not get a little tropical for the Summer? To keep this margarita season going strong you’re going to need to try these pineapple jalapeno margaritas. The pineapple is the perfect naturally sugary component for the base of this drink, while the jalapeno and lime help to cut through the intense sweetness. Just add in the liquor and go.

I actually had intended to serve this as a pineapple sorbet with the alcohol poured over it, but the liquids melted the sorbet almost immediately. Instead, this drink can be easily self served by your guests by just mixing the ingredients into a cup, no shaker or blender needed. Set out the sorbet with a scoop and have your guests add in the classic lime juice, tequila, and triple sec. Top with jalapenos, and you have the most perfectly balanced and flavorful margarita around.

Fresh Pineapple Sorbet

  • Servings: 20-24 scoops
  • Difficulty: easy

Ingredients

1 Pineapple, cut into small pieces
1/4 cup Sugar
2 Tbs. Lime Juice

Take all of your ingredients and mix them together in a blender until smooth.

METHOD WITH ICE CREAM MACHINE: Pour the mixture into the cold bowl of an ice cream machine and churn according to the manufacturer’s recommendation (about 20 minutes for me). Pour into a sealed container and freeze for at least 2 hours.

NO ICE CREAM MACHINE: Alternatively, if you do not have an ice cream machine, you can pour the blended mixture into a sealed container and freeze it for at least 2 hours. This will be fine for margaritas, but will not taste like sorbet if served separately from the drink.

Pineapple Jalapeno Margaritas

Ingredients

1 scoop Fresh Pineapple Sorbet
1 oz. Clear Tequila
1/2 oz. Triple Sec
1/2 oz. Lime Juice
1-2 Jalapeno Slices
Lime Slice
Coarse Salt

Take your lime and rub it along the rim of the glass. Turn your glass upside down into a bowl of coarse salt to line the rim. Place the scoop of pineapple sorbet, tequila, triple sec, lime juice, and jalapenos into the glass and stir to combine. Add ice if desired and serve.
