I’m all for trying new drinks, especially when there’s a crowd about to help me drink them! For the Fourth I had a few lovely people over for a relaxed day of chatter, soccer viewing, and drinks. Being that it was the Fourth, we purchased an enormous watermelon. As in way too big for 6 people to eat along with the abundant hot dog and guac diet we had prepared for the menu.
At a measly 1 beer into the day, I got inspired to make something a little lighter to sip on. So was born the Watermelon Mint Spritzer!
For a fancy, yet seriously easy refresher, whip up a batch of these and head out to soak up some sun by the grill. It was truly the perfect cherry on top (or mint sprig) to our perfect day!
Ingredients:
(Makes 4 drinks)
3 cups Watermelon, cut into cubes
1/2 cup Orange Juice
1 Tbs. Honey
1/2 Bottle of Sparkling White Wine or Champagne (I prefer New Age, shown below)
4 Sprigs of Mint
Throw your watermelon cubes, orange juice, and honey into a blender and mix until the watermelon cubes have puréed. Pour the watermelon mixture into 4 wine glasses and top with the sparkling white wine (about a half cup for each glass). Stir each glass and add a mint sprig on top.
The mint is amazingly powerful, giving a great amount of flavor and coolness to the drink. This beverage can also be served up virgin and tastes equally amazing… I’m just partial to the bubbly version! Fun drinks, fun day, and fun friends, it doesn’t get much better than this!
