Over Labor Day, my mom offered to make me a breakfast sandwich that my brother Brian had introduced to her and the rest of my family. I didn’t know how it would be much different from any other breakfast sandwich, but I said yes nonetheless.

Let me tell you, this combo was a GAME CHANGER. The salty salami and intense flavor from the sharp cheddar were perfect compliments to the gooey egg yolk and crispy english muffin. I never ever ever buy salami. Like ever. (Claps for understanding my Taylor Swift reference.) But on the fateful drive home from the airport to my apartment last Tuesday, I went to the store and bought salami and sharp cheddar and was ready for round two! And three. And four.

Now it’s not necessarily a sandwich, per say, since I left mine open faced. If you want it to be a true hand held sandwich of sorts I would just cut one of the eggs and slap the two halves together.

I know it sounds like a normal breakfast sandwich, but try this combo out and you will understand why I am raving on about it so much!

Note: One single spinach leaf does not, in fact, make this into a salad. I have tried the sandwich with a little more spinach and find it equally as delicious – so you could sneak a serving of veggies in there if you wish.

Salami + White Cheddar Breakfast Sandwich

Ingredients:

1 English Muffin
2 Eggs
2 Tbs. Freshly Grated Sharp White Cheddar
2 Slices of Salami
2 tsp. Butter
2 Spinach Leaves
Salt and Pepper

1. Heat up pan to medium-low and melt 1 tsp. of your butter. Crack the eggs in and continue to cook until the white is no longer clear and the yolk is still runny.

2. Toast your english muffin and top with the remaining butter. Grate up your cheese.

3. To assemble, place your salami on top of each english muffin half, add the egg, then cheese, and top with a spinach leaf. Season to your liking with a little salt and pepper.
