Thanksgiving week is finally upon us! Or maybe it snuck up on you and you’re saying, “Thanksgiving week already!?”. That’s kind of how I feel. 2016 has been a blur of a year with each month disappearing as quickly as it arrived, but I’m thankful for every moment I got to cherish with the wonderful people I have met this year or known for over ten. It’s crazy to think I didn’t even know some of my greatest food blogging friends a year ago that I feel like I’ve known now for ages.

What I can say I’m really ready for is my trip to Chicago! We’re going to have Thanksgiving with just my small family minus one brother – it will be the smallest Thanksgiving we’ve ever had! Usually my family hosts one or both families and it turns into a 25+ people event. Tons of fun, but definitely a different vibe. It will be nice to have a relaxed day in PJs cooking and baking and not worrying about how clean the house is or how nice we look. Just family, what’s really important!

Though I’m not totally sure of our menu, we are planning to make some special little treats to enjoy together. One item that we all agreed was really fun and fancy feeling was these goat cheese stuffed, honey drizzled figs.

They are warm, gooey, sweet, and salty. You can pop them right in to your mouth as a perfect appetizer before indulging in a full plate of turkey, stuffing, and cranberries. These stuffed figs are really beautiful and unique, so if you do plan to cook to impress your guests, these are the perfect dish!

What is on your Thanksgiving menu this year? A handful of old favorites or are you getting adventurous? I tried my hand at cooking my first turkey 2 years ago and it was really successful! We then tried a turducken the next year and were slightly disappointed with how dry it was… you win some you lose some!

Honey Drizzled Goat Cheese Stuffed Figs

  • Servings: 4 as an appetizer
  • Difficulty: easy

Ingredients:

12 small Figs
2 oz. Goat Cheese
1 Tbs. Honey

1. Turn the broiler on on the oven. Wash and dry the figs. Cut the stems off and slice the top with an “X” about halfway through. Cut a small amount off of the bottom of the figs if they do not stand up on their own.

2. Soften up the cheese by letting it sit out for a few minutes and then spoon into a plastic bag. Cut the tip off of the bag and squeeze the cheese into the slots in the figs. Place the figs on a baking sheet under the broiler for about 5 minutes, or until they start to brown on top. If you want extra color you can use a torch to brown them.

3. Place the figs on a plate and drizzle with honey. Serve immediately.
