Black bean brownies? No thanks.
This is the response I got from the three people who I offered brownies to the first time I made these. And who ended up loving them out of the three? Three. That’s right 3/3, for those of you who weren’t keeping track. I get it, they sound a little funny.
THESE BROWNIES ARE RIDICULOUS. Not only do they not taste like black beans, they actually mostly just taste like fudge and Nutella. Also, since they are made with black beans they are incredibly filling. I honestly can’t eat more than two in a sitting, which is saying a lot since I can put away baked goods like it’s nobody’s business.
Are they exactly like normal brownies? If you are looking for a difference in taste you will find it, but that’s not a bad thing. If you don’t tell people that they are “healthy brownies”, they won’t know the difference. I find them to be just a little less sweet when compared to normal brownies, which makes them more palatable to more people. This recipe doesn’t require most of the same staple items I’m used to using either. No eggs, no flour, no butter, and very little white sugar. And you make it in a blender?? I was nervous too, don’t worry, but these brownies are moist, chocolaty, easy to make, and way healthier than any other baked good I’ve ever thrown at you. So just trust me and try them out!

Nutella Black Bean Brownie Bites
Ingredients:
1 can Black Beans (15 oz.) – strained and thoroughly rinsed
2 Tbs. Cocoa Powder
1/2 cup Quick Oats
1/4 tsp. Salt
1/3 cup Honey
2 Tbs. Sugar
1/4 cup Coconut or Vegetable Oil
2 tsp. Vanilla Extract
1/2 tsp. Baking Powder
1/2 cup Nutella
1. Preheat the oven to 350 deg F.
2. Mix all of the ingredients together in a blender except for the Nutella. You will want to mix all of the ingredients on high for at least 1-2 minutes to make sure you have totally and completely broken up all of the black beans and oats.
3. Grease a mini muffin tin with cooking spray and spoon batter into each hole so that they are almost full. Use a spoon to place a 1/2 tsp. of Nutella into the center of each brownie, and swirl it around with a toothpick.
4. Bake your brownie bites for 10 minutes and then cool them in the pan for 10 minutes before serving.

I’ve never been brave enough to try a black bean brownie recipe but maybe I will now that I know someone who’s had success with them!

Yes! I was completely skeptical but have now made them many times and can’t stop! They are really so delicious and taste so much like normal brownies it’s kind of magical…
