Clementine Coconut Cocktails

What happens when you have a bag of clementines about to go bad in the refrigerator, a new found love for Waterloo coconut sparkling water (not sponsored, it’s just that good), and a free Friday afternoon? This bomb cocktail that tastes like vacation, but isn’t so ungodly sweet that you get a headache as you’re drinking it. The recipe I’m sharing with you all today is truly a gem.

Cocktails are really fun, and they can be incredibly complex, but it’s nice when you find one you can create quickly at home with just a few ingredients. This one uses only a fresh clementine, some coconut sparkling water, and good rum. Let’s break down these ingredients:

  • Fresh clementines are sweet, juicy, and incredibly flavorful. You might be tempted to swap this out for orange juice, but I beg you not to. It doesn’t deliver the same sweetness or flavor, and you will end up with a really bland drink.
  • Sparkling water is the water of millennial’s everywhere, and I happen to be one of them. I had never loved most coconut flavors because they taste so processed, but after trying Waterloo it has become my new favorite flavor. Why is it so good? I don’t know, but it’s worth the extra couple of dollars. The coconut in this drink gives it the tropical vibes we are all dying for at this time of year. The fact that it’s water means we are hydrating while drinking, and that’s always a win in my book.
  • I’ve never been a huge rum drinker, but a friend of ours brought us back some Havana Club rum, and it is amazing. I’m sure there are other good options out there, but I won’t even attempt to recommend one. One thing I know is that rum drinks are vacation drinks, and Friday afternoon deserves vacation status.

The other main thing I love about this cocktail other its ease is the fact that it isn’t packed with sugar. Clementines have natural sugars, and rum is sugary in its general existence, but the majority of the drink is just water. You feel like you’re drinking a pina colada, but you won’t feel so terrible the next day since you haven’t consumed 50 grams of sugar in one cocktail.

Clementine Coconut Cocktail

Ingredients:

Juice of 1 clementine
1 oz. Havana Club Rum
2 oz. Waterloo Sparkling Coconut Water
Ice

In a small glass, pour the juice of one clementine and 1 oz. of Havana Club Rum over ice. Fill the rest of the glass with Waterloo Sparkling Coconut Water (about 2 oz.). Stir and enjoy!
