If there’s one thing I know, it’s that Fall arrives and there is a limited time to bake as many desserts as humanly possible. The spiced flavors mixed with seasonal fruits and squashes make for the best treats. After making three pumpkin desserts in a row, I had realized that I had completely left the apple treats to fall by the wayside!
Before we get into the nitty gritty of the recipe, I think there is something to be said for single serving desserts. By splitting up the recipe into little ramekins, they become more special for a dinner party or an afternoon get together. Personally, I love them because I know I get an entire container of something to myself. Small things are also just cute. Don’t you agree? Why is that? I suppose a mini apple crisp is the puppy of full sized apple crisps, and we can all agree that puppies tend to be cuter than the dogs.
Onward, the recipe! In order to mix two of my favorite apple goodies, caramel apples and apple crisp, I came up with this caramel apple crisp. The apple crisp portion of the recipe is pretty classic: Granny Smith’s peeled, chopped, and mixed with sugar and spice, plus a topping with a balanced mix of spices with an oat heavy topping – I like a bit of crunch to my crisp. What makes these little guys so special is that they have a touch of gooey decadence from the caramels inside.

They seep into the apples and combine with the topping to add a richness to the recipe. Topped off with vanilla ice cream, you really can’t go wrong.

Single Serve Caramel Apple Crisp
Ingredients:
2 Granny Smith Apples, peeled and diced into cubes
2 tsp. White Sugar
1/2 tsp. Cinnamon
6 Chocolate Caramels
1/3 cup Brown Sugar
1/3 cup Oats
1/2 cup Flour
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/4 cup Butter
1. Preheat your oven to 350 deg. F. Butter 6 ramekins. In a small bowl, mix together your granny smith apples, white sugar, and 1/2 tsp. cinnamon. Divide among the ramekins.
2. Cut your chocolate caramels into four pieces and sprinkle on to the tops of your apples.
3. In a new bowl, mix together you brown sugar, oats, flour, 1 tsp. cinnamon, and nutmeg. Once combined, add in your butter in small chunks and mix with your hands until it is all incorporated. Divide among the ramekins, covering the apple mixture.
4. Bake the apple crisps for 30 minutes, or until the tops begin to bubble. Serve warm with vanilla ice cream.
