Fourth of July weekend is here! So much more relaxed than possibly any other holiday and with no preconceived notions (other than fireworks), the Fourth has always been a special holiday for me. I always have a great time because my friends and/or family and I spend time together, cook, and live outside. There’s really not much else you need to have a wonderful day.
In order to properly celebrate, you will probably serve up some sort of beverage and some sort of food, most likely in the colors red, white, and blue. Berries are in abundance. Watermelon is ripe. People are happy.

There’s nothing better than a cold treat made with fresh berries and herbs to cool you down next to the grill. They’re only three ingredients, too!
It sounds like I’m obsessed with mint. I guess I kind of am… but in all seriousness, I always serve these up on Independence day and they are such a hit!
This cake is beyond delicious and every time I make it people come back for more. It’s perfect for an outdoor party too because nothing about it will melt in the sun.
If you’re hosting a slightly more formal party (shirt required, non pool party), peaches are in season and this salad is a fun twist on a traditional recipe.
5. Daiquiris in Pineapple Cups
If you’re going to be by the pool, this is the perfect excuse to make pineapple cups and throw a drink in them. For those of you in Texas, H-E-B also featured this recipe on their Instagram this week!!
My favorite dessert in general, these lemon squares are a great Summer treat with a super tart lemon curd over a buttery shortbread crust.
Do y’all have any exciting Fourth of July plans? I have a few parties here and there, some furniture shopping to do with the boyfriend who is moving to a nice new place, and probably a drink by the pool. I’d say it’s shaping up to be a good weekend!

Yum! That lemon blueberry cake looks deliciously festive. I’ll be camping and river tubing with friends this 4th, so it’ll probably be a hot dogs and s’mores weekend for me!
