There’s just something about tea time that rushes me into relaxation. Nostalgic memories of my mother and grandma pouring big pots of English Breakfast and passing around a tray of goodies swirl through my mind every time I sit down for a cup. My siblings and I would come home from school and plop down at the kitchen table to jabber on about our days while scrambling to pass the milk and sugar.

Shortbread cookies and I go way back, as well. Every year for Christmas, Santa would bring me a box of Walkers Shortbread. News spread, and this year I acquired 3 boxes. And then they magically disappeared… who knows what could have happened there?

The buttery, flaky consistency of these cookies is perfect for dunking into a cuppa tea, which got me wondering why you couldn’t just put them together? My friend Liz turned me on to the idea of baking the tea right into the cookies! She made some with chai that gave the cookies a lovely spiced taste. Having received some of the most gorgeous and scrumptious Lavender Earl Gray from Adagio teas, it inspired me to bake some of my own tea infused cookies!

This recipe can be made with any finely ground tea you would like, but my favorites are flavored earl gray’s and chai. Pour yourself a spot and get the oven going!

Lavender Earl Gray Shortbread Cookies

  • Servings: 24-30 cookies
  • Difficulty: easy

Ingredients:

1/2 cup Butter (1 stick)
1 cup Flour
1/4 cup Powdered Sugar
2 Tbs. of Ground Lavender Earl Gray Tea Leaves (or about 3 bags of another tea)
1/4 tsp. Vanilla
1/2 tsp. Salt

1. Soften butter to room temperature, but do not melt it! Cream up the butter and add the sugar and vanilla. Next, add the flour, salt, and tea until it is all just combined.

2 Place the dough on a piece of wax paper and roll into a 1″ thick log of dough. Roll the wax paper around it and twist off the ends. Place dough in the freezer for 30 minutes to make sure the roll is firm. Without this step, the dough will crumble as you cut it!

3. Once cooled, preheat the oven to 350 deg F. Then unroll the log of dough and cut into 1/4-1/2″ thick slices. Place slices on to a cookie sheet.

4.  Bake the cookies for 15 minutes or until slightly browned on the edges. Serve with a cup of tea to complement your cookies!
