Sometimes you’re in a situation where the kitchen is… limited, to say the least. One of these places that comes to mind is a college dorm, a place I oh so loathed to bake in. The second place, is my friend David’s kitchen.
A viewing of Sharknado 2 just wasn’t going to be complete without a dessert for snacking on, so Adriana and I took it upon ourselves to figure something out. Cookies? Cake? Not without any baking pans, scrapers, spatulas, or cooling racks… Ugh, how the heck were we going to get our baking on!?
The answer, friends, is sneakily hiding in these gourmet cookie dough truffles, made in the least gourmet of kitchens. All you need is something of a bowl (we literally used a random pot), a spoon, a plate, wax paper, a microwave, and a fridge. They look and taste like you popped into a candy store on your way to a party to pick them up! These truffles are melt in your mouth bites of rich cookie dough, covered in chocolate for a glamorous twist. They’ll be a hit with kids 3-83!
Since a new school year is upon us, I took the liberty to write this one for the kids. College is hard, make these easy truffles and make some really good friends handing them out in the library!
Ingredients:
1/2 cup Brown Sugar
1 cup Flour
1 cup Mini Chocolate Chips
1/2 cup Butter (1 stick)
1 tsp Vanilla
1 1/2 cups Chocolate (I used more mini chocolate chips)
Directions (college style):
1. Grab your bowl (or pot) and mix together the butter, brown sugar, and vanilla with a spoon. Drink a beer for improved mixing strength.
2. Add flour and give up the spoon act. Mix it together with your hands to help get it all to stick together. Add mini chocolate chips to the pot (and a couple to your mouth) and continue to mix dough with your hands.
3. Once your dough is all mixed, grab a few roommates to form 1 inch balls and for taste testing. There always seem to be a few to help with the second point at least… Place on a plate with waxed paper. Place the truffles in the fridge or freezer for about 30 minutes until they have hardened.
4. Melt your remaining chocolate in the microwave at 30 second intervals, stirring in between, until all the chocolate has melted. Use a fork to stab your cookie dough balls and dip them into the melted chocolate to coat. Place coated cookie dough truffles on the waxed paper plates and place in the fridge or freezer to harden again for about 20 minutes… Or about as long as those starving students can last before breaking them open.
You can serve these up after hardening or keep in a tupperware in the freezer for up to a month!

They are about 150 calories a piece, but they’re so rich it’s hard to eat more than one or two! The recipe makes about 30 truffles.
