Christmas Santa Whoopie Pies

With Christmas less than two weeks away I have been packing in as many peppermint flavored, red and green themed, twinkly light adorned activities as I can! This past weekend my friend had a Christmas party and I (naturally) volunteered to make dessert. I thought, what would be cuter than some Santa whoopie pies?

I easily whipped up the whoopie pie cakes and frosting using Pillsbury Purely Simple White Cake and Frosting mixes from my December Degustabox (did y’all see that I have a deal going with Degustabox right now? Since the pies were so simple, I was able to focus my efforts on the decorating!

I have to say that the quality of this cake mix was above average. Compared to traditional cake mixes, it was less sweet in taste and didn’t have the traditional processed texture. Although the point of this cake and mix was that it was “pure” and actually had no artificial colors, I did add color to mine to make them red for Santa’s coat.

The frosting was interesting to me because, realistically, buttercream frosting is just made from butter, powdered sugar, milk, and vanilla. The frosting mix required you to add butter and water to it, so it felt like the mix was really just some flavored powdered sugar and powdered milk. You could really make buttercream frosting just as easily from scratch, but it was MUCH better in flavor when compared to the canned frosting which I really detest. Maybe the bag makes frosting more accessible to some home bakers, so I support it. It was a bit sweeter than my traditional buttercream, but it worked well with the cake.

To make these little whoopie pies into Santa’s, I used most of the frosting to fill the pies, some to create fur down the front, and the rest was dyed for the belt. For the full instructions for these Christmas Santa whoopie pies, take a look at the recipe below.

Mini Christmas Santa Whoopie Pies

Ingredients:

Cake:
1 box of Pillsbury Purely Simple Cake Mix
1/2 cup Butter, softened
1/2 cup Milk
3 Eggs
Red Food Coloring

Filling:
1 package of Pillsbury Purely Simple Frosting Mix
1/2 cup Butter, softened
1/4 cup Water
1/4 cup Cocoa Powder
Yellow Food Coloring

1. Preheat the oven to 350 deg F. Mix together the cake mix with the butter, milk, and eggs until fully combined. Add in the red food coloring and mix to make the batter a deep red color. Spray a baking sheet with cooking oil, and then pour the batter into a gallon sized Ziploc bag, cut the corner off, and squeeze circles the size of a silver dollar on to a baking sheet 1-2″ apart from one another. Bake for about 8-9 minutes. Remove from the oven and cool completely on a wire rack.

2. Once your cakes have cooled, whip up your frosting by beating the softened butter until smooth, and then add in the frosting mix and water. Scoop most of your frosting (save about 3/4 cup) into a gallon sized Ziploc bag, cut the corner off, and then pipe frosting onto the flat side of one half of the cakes. Create a sandwich by topping them all with another cake half. You should have about 1/2 cup of white frosting left in the bag for the decorations.

3. To make the decorations, use the remaining white frosting in the bag to swirl some frosting down the middle of each pie. This will make the fur on Santa’s jacket. Take 1/5 of the remaining frosting in the bowl and put it into a smaller bowl. Add in some yellow food coloring and stir. This will be used to make the belt buckle. With the rest of the frosting, add in the cocoa powder and stir until combined. Pour this frosting into a small bag and cut off the corner, or a piping bag fit with a flat tip. Draw a belt across the cakes in the opposite direction from the fur. Then place the yellow frosting into a small bag and cut the tip off. Use this to draw a small square in the center as the buckle of the belt.
