As you may have seen on Instagram over the weekend, Valentine’s cupcakes were whipped up and doled out to a couple of special valentines. Megan found a seriously tempting recipe that she thought K and B would like, so we tried it out! Though I’m not usually one to go for a three part cake recipe, Megan likes the challenge. (Seriously, every recipe she wants to try is always so crazy!) But this one was worth the work.
These Jack + Coke Cupcakes came from StressBaking.com. They include a decadent chocolate cake that includes Coca Cola in the ingredients list, along with a chocolate and whiskey ganache in the middle, and a whiskey buttercream on top. YUM. I must say, I was in love with the chocolate cake portion of the recipe, but there was really no Coke taste to be found. The dessert was more of a Jack + Cocoa Cupcake… but I don’t think that really bothered the boys though.
My tip for following this recipe is to definitely add more whiskey to the frosting! More alcohol please! (4 Tbs. is good.) The chocolate and whiskey ganache in the middle is delicious, but you don’t really need it if you’re feeling a bit lazy. There is a good amount of whiskey taste in the frosting so you get the overall effect there. Also, this makes WAYYYY more than 12 cupcakes. It’s at least 24 for sure. We multiplied the recipe by 1.5 and ended up with 24 cupcakes and a 9 inch round cake… a little ridiculous. We also added gummy hearts. It was Valentine’s Day after all.
You all know I love a good boxed cake, but I may just add this chocolate cake to my recipe box…the coke, though not apparent, really adds something to the cake! Enjoy this recipe, we definitely did. And thanks to Stress Baking for the lovely recipe!

I’m so glad that you liked them! And thank you for commenting about the quantity – apparently I never adjusted the yield from my original recipe to reflect that (for me) it usually makes 20-24. I just changed it – sorry that you ended up with so much!
