So, this month at work has been rough you guys. Exhausted, and even frustrated on some days, there are really only two ways to unwind: dessert or cocktails… or wine… or beer. Ok, I don’t discriminate on beverages.
Thankfully by Friday I was out of work and ready to celebrate with friends who came in from out of town! Tex Mex and delicious margaritas at El Tiempo were on the menu for the perfect TGIF dinner. Apparently I hadn’t had quite enough, though, because I was craving margaritas again on Sunday! And cookies. But that’s just always. Don’t worry though kiddos, I’m an engineer, so it’s my job to come up with solutions! Let’s put them together and see how it goes.
Spoiler alert: it was awesome. Starting with a simple, but delicious, buttery sugar cookie, I swapped out the vanilla for tequila and threw in some lime zest to get our cocktail cookie started. What really tops them off is the lime glaze to give them a TON of citrus flavor! By dying the glaze green and adding some white details, these lime slice cocktail cookies were ready to be gobbled up.
I also added a few cute Texas ones in there, because you can’t have a marg without thinking of Texas.
The salty lime flavor of a real margarita is quickly apparent, and after a few bites you can taste a subtle kick from the tequila. Since the tequila is baked out, these are kid friendly too! They’ve quickly become a new favorite for me, and are perfect to fulfill any cocktail or sweet craving!
Margarita Sugar Cookies
3/4 cup Butter
1 cup Sugar
1 tsp. Tequila
2.5 cups Flour
1 tsp. Baking Powder
1/2 tsp. Salt
4-5 cups Powdered Sugar
5 Tbs. Lime Juice
6-8 drops Green Food Coloring
White Detail Glaze:
2/3 cup Powdered Sugar
1.5 Tbs. Lime Juice
1. Cream together the butter and sugar. Add the eggs and tequila and mix until smooth. Slowly add in the flour, baking powder, and salt and mix until fully combined. Cover the dough and place into the refrigerator for 1 hour.
2. Preheat the oven 400 deg F. Take your chilled dough and place it on a flat, floured surface. Take a rolling pin (or a water bottle because you’re very unprepared and don’t own one) and roll out the dough to 1/4″ thick. Use a small glass to cut 2-3″ circles of sugar cookie dough and place on a cookie sheet 1″ apart. Bake for 6 minutes.
3. Once the cookies are all done baking, put together your glaze by mixing the powdered sugar with the lime juice. Then add food coloring and combine. Cover each cookie by placing the cookies on a cooling rack and then spoon 1/2 Tbs. of glaze on to each cookie and spread it to the edges. The glaze will start to drip down the sides and fully cover it. You will definitely have a mess to clean up afterwards, so you might want to place a piece of waxed paper underneath.
4. Finish off the cookies once the green glaze has slightly hardened by making the thicker white glaze for the lines in the lime design. Mix together the powdered sugar and lime juice and place in a plastic bag. Cut a tiny corner off the bag to let a single line of glaze out and draw a circle around the perimeter of the cookie. Then make two overlapping X’s in the center.
Store in an air tight container for up to one week.
