With holiday weekends, Summer vacations, and pool parties in your future, you had better be ready with some recipes to entertain and cool your guests. I find having a cocktail ready when people arrive is the easiest way to make them feel at ease, so let’s get something going here, shall we?

Here in the South, you can find people cooling off with a tall glass of iced tea on every street corner. I like to have a pitcher of cold brewed black tea in my fridge to take out to the pool with me, but a new favorite has wiggled it’s way in to my heart. After being approached by Adagio Teas to try out their product, I was enticed to order a big order of the highly rated (97/100!) Peach Oolong Iced Tea bags. When they came in the mail and I opened the bag I knew I was in for a treat. The smell of peachy goodness and floral hues filled my nose and sent me swirling into recipe mode.

To mix this tea up and drink it alone would have been wonderful, but I like to make things a little more complicated. By adding some lemon and mint to the tea, you get a truly refreshing beverage that tastes just as cooling as it feels! The best way to make these is to throw the tea into a pitcher and then serve the vodka on the side to let your guests decide how sassy they feel like getting. That way, if you have some leftovers you can drink them up at any time of the day (or serve them to the smallest of poolside goers). I served mine up in these pretty champagne glasses from Crate and Barrel, just for funsies, but a tall water glass works perfectly well!

Lemon and Peach Tea Cocktail

Ingredients:

1 Liter of Water
1 bag Adagio Peach Oolong Iced Tea
1/4 cup Lemon Juice
1/8 cup Sugar
10 Mint Leaves – plus some to serve as a garnish
Peach Vodka on the side

1. Heat up water to a boil and steep your tea for the time allotted on the bag. Remove the bag.

2. Add your lemon juice and sugar to the tea and stir it up to help the sugar dissolve.

3. Add in the mint leaves and let them soak for about 10 minutes. Remove the mint to keep it from overpowering the other flavors.

4. Pour the tea into a tall glass full of ice and add 1 oz. of peach vodka. Stir it up and garnish with extra mint!

      1. We typically use Arnold Palmer mix (half lemonade/half iced tea), and mix it with the sweet tea vodka, add a splash of water, and a fresh squeezed lemon. It’s so refreshing and delish! 🙂
