Sometimes I come home and I’m just in a crabby mood. Maybe it’s traffic, maybe it was computer problems at work, maybe the fact that there still isn’t a rabbit just sitting there magically on my couch… but the one thing that can always get me out of my rut is a little creative endeavor. A craft, a new recipe, or creatively watching the Mindy Project while pretending to do crunches on the rug… ok that last one isn’t so creative, but I do love the Mindy Project.
Anyhow, this particular post is one creative project inspired by crabbiness. Blue blue blue crabbiness. And avocado! Things are looking up!
I made this Crabby Avocado Dip for my family and some friends on a mini vacation and we devoured it! It’s kind of like your favorite ceviche meets guacamole, so really how could you go wrong? A little spicy, a little tangy, and a whole lot of decadent. Just the trick to get your spirits up!
Crabby Avocado Dip
Ingredients:
2 Avocados
1/4 cup Sour Cream (or Greek yogurt, healthier!)
4 Tbs. Lime Juice
2 Tbs. Fresh Chives
1 cup Blue Crab meat
1/4 cup Mayonnaise
3 Tbs. chopped Fresh Basil
1 Red Jalapeno, finely chopped
Salt and Pepper to taste
[Serve with Tortilla Chips]
1. Take your avocados and mash them together in a bowl. Mix in the sour cream (or Greek yogurt), 3 Tbs. of lime juice, and chives. Season with a dash of both salt and pepper. Take this mixture and pour into a small glass bowl. Level out the top with the back of a spoon.
2. Take your crab meat and remove any excess liquid. Put the crab into a separate bowl with the mayonnaise, basil, jalapeno, and 1 Tbs. of lime juice. Season with a dash of both salt and pepper. Add this mixture on top of the avocado.
3. Place into the refrigerator covered until you’re ready for the party to start! Or take it over to the couch with a bag of tortilla chips for a seriously wonderful Netflix marathon to say bye bye to that gloomy day!
